Ever wanted to see in the dark? Then I have the perfect solution for you! I present the Gluten, Dairy and Refined Sugar Free Carrot Cake! From the moist consistency to the slightly sweet, flavoursome and warm spice undertones, this carrot cake is sure to help you meet your daily intake of Vitamin A and Beta Carotene, both of which are great for your eye health.
I N G R E D I E N T S
- ¾ Cup of Almond Meal
- ½ Cup of Coconut Flour
- 3 Whole Eggs
- ¼ Cup of chopped dates
- 3 Grated Carrots
- 1 Tablespoon of Cinnamon
- 1 Teaspoon of Baking Powder
- ¼ Cup of Fresh Pineapple
- ½ Can of Coconut Cream
M E T H O D
1) Mix all Ingredients in a large bowl
2) Spray a rectangular baking tin
3) Cook at 180 degrees celsius fan forced until golden brown
Tip:
-You can use organic ingredients for all of the above, however if you like enjoy this recipe as much as I do that may become prohibitively expensive!
