Chocolate Banana Muffins

Unlike the protein muffins I shared in the past, these do not have any added protein powder and are a little higher in fat. I find these chocolate banana muffins are a perfect snack to have at any time of the day whether it be breakfast lunch or dinner! More often than not I end up having mine on top of breakfast as the fats combined with a protein and carbohydrate dense breakfast helps slow digestion keeping me fuller for longer, I hope you enjoy making them!

IN G R E D I E N T S


- 2 ripe bananas
- 6 free range eggs (substitute a cup of egg whites if you would like to increase protein and lower fat)
- Tablespoon of cinnamon
- 2 Cups of Almond Meal
- ½ Cup of Cocao (increase or decrease depending on how much of a “chocolate” flavour you would like)
- Top with slivered almonds

M E T H O D

1) Peel and mash bananas
2) Add Almond Meal
3) Add cinnamon & cocao
4) Crack eggs and combine all ingredients
5) If mixture is to thick feel free to add in some almond milk or more egg whites to combine
6) Spray a 12 piece muffin tray with coconut oil, add in mixture, top with a walnut
7) Bake on fan forced at 180 degrees celsius until golden brown, enjoy!
